Jim’s Favorite Cornmeal Bread Recipe

Jim’s Favorite Cornmeal Bread Recipe is the best of traditional southern cooking. With all the great fresh flavors and it's a fun and easy recipe to make. The recipe is ideal  for baking and serving in your Cast Iron Skillet. 


  • 1 cup Barkley's Mill Cornmeal
  • 1 cup all-purpose flour
  • 2/3 cup white sugar
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1/2 cup butter
  • 2 eggs
  • 2 tablespoons of mayo (optional) 

Pan - 9-inch cast iron skillet.  

Preheat Oven 

Begin by preheating your oven to 375 degrees.
Place your Iron Skillet in the oven and let the skillet come to temperature with the oven. 

In a large bowl combine the dry ingredients

Lighting whisk the wet ingredients to bring together. 
Combine the Dry & Wet ingredients

Slowly pour and whisk the wet ingredients with the dry until well blended. Stir out any large lumps. Once you have a smooth batter its ready for the oven - no proofing time needed. 

Carefully remove the warm Iron Skillet from the oven. Grease the skillet lightly with butter. Pour batter into your warm skillet and place skillet back in the oven. 

Bake for 30-35 minutes or until firm. Use the dry toothpick test by placing a toothpick in the center of the Cornmeal, if the toothpick is dry Your Best Cornmeal Bread is ready. 

Let the Cornmeal Bread rest for 15 minutes before serving.
